Favorite One Dish Meal

I have loved this since I was a young girl, my grandma in Montana made it. Next to her homecanned jams and jellies, it was my favorite dish! She served it with a perfect punch and warm bread.

Oven version:

1 envelope onion soup mix
2 cups rice
6 boneless/skinless chicken breast (small to medium)
2 cans cream of mushroom, or cream of chicken soup
2 cans milk

Layer in pan exactly as listed. I move the chicken around a bit as I add the milk to make sure some slips down the cracks.
Cover with aluminum foil
bake at 350 for 1 hour or so until chicken is done.

Crockpot version:

The same ingredients, spray crock first with Pam. Cover (obviously) and cook on low 7-8 hours, or high 4-6 hours. The chicken is so tender, especially on low!

Comfort food in it's simplest form!

My 9 year old, Joe, got accepted to a special program here in our school district next fall. He is very excited, and we are pleased that his loves learning and wants to be part of the program.

Favorite Texas Sheet Cake


Like a soft, slightly cakey brownie:

Ingredients:
1 cup butter or margarine
1 cup water
1/4 cup baking cocoa
2 1/4 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
ICING:
1/2 cup butter or margarine
1/4 cup milk (or more, depending on consistancy. You want it smooth, not hard to spread. Somewhere between a glaze and frosting)
3 tablespoons baking cocoa
3 3/4 cups confectioners' sugar
1 teaspoon vanilla extract

DIRECTIONS
In a large saucepan, bring the butter, water and cocoa to a boil. Remove from the heat. Combine the flour, sugar, baking soda and salt; add to cocoa mixture. Stir in the sour cream until smooth. Pour into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean.
In a saucepan, melt butter; add milk and cocoa. Bring to a boil. Remove from the heat. Whisk in confectioners' sugar and vanilla until smooth. Pour over warm cake. Cool completely on a wire rack.

My notes:
I use real butter, unsalted.
Let them cool alot before you put the frosting on, otherwise it tears as you spread.
Let them cool all the way before you cut them. Maybe enen put in fridge after cooled for 1/2 hour or so before you cut.

Favorite Salad Dressing

This goes great with the Taco Salad Recipe:

Dressing:
1 cup low/non fat sour cream
1 envelope Hidden Valley Ranch Salad dressing, I use non fat
1/2 envelope Hidden Valley Fiesta Ranch Salad dressing
6 tomatillos (husked and 1/4'd)
1 clove garlic, minced
Juice from 2 limes
1/4-1/2 cup chopped cilantro

Blend in blender until smooth!

It has many uses, I like to dip chips in it, even though it's thin. I mix it with refried beans to make a yummy dip!

Favorite New Recipe

Delicious shredded pork for Taco Salad:

4-5 lb pork shoulder roast
1 cup brown sugar
1 cup salsa of your choice

Cook all day in slow cooker on low.
Serve on your favorite lettuce, top with your favorite Taco Salad toppings; cheese, sour cream, tomatoes, olives, chips, avacado, onion, etc....

Tips:
I've made this twice. Here are my tips:

I used beef roast once, I don't recommend it - too dry!

The second time I turned the crock pot on high for awhile, thinking it wouldn't be done in time. Don't do that either! You want the pork to fall apart at the end, thus you need it on low!

And, leave some of the juice in it when you transfer it to serving dish, or provide a scoop to get it out of the crockpot with so that some of the juices come up with it. Much better that way!

Tomorrow, the perfect dressing to go with this.

Month of May - Month of Favorites

Doing a picture a day (or close) was fun for April. This month I am doing a favorite a day. Favorite picture, favorite recipe, favorite website. That kind of thing. Feel free to jump in and tell me your favorites in return, I'd love to hear.

Favorite place to visit in Seattle - Pike Place Market.
My dear friend Whitney is visiting me this weekend and we spent a couple of hours wandering around Pike Place Market. This is my favorite time of year to go there. I love all the flowers!! Here are a few pictures of the bunch I bought and is now brightening up my entry way:
