Here's a simple recipe that often satisfies my muffin/brownie cravings. Mind you, nothing is as good as a thick, delicious brownie! But these are a good substitute, and a good muffin. I use regular size muffin pans and fill them 1/3 to 1/2 way. The recipe makes around 25 muffins.
Version 1:
3 cups All Bran Cereal
2 1/2 cups water
low fat brownie mix
1 1/2 teaspoon baking powder
Soak cereal in water for 10 minutes. Add remaining ingredients and mix. Bake at 350* for 20 minutes.
Version 2:
3 cups All Bran Cereal
2 1/2 cups water
1 package, No Pudge Fat Free Brownie Mix
1 1/2 teaspoon baking powder
1/2 to 3/4 cup flour
1/3 cup applesauce
1 tsp. vanilla or almond extract
Soak cereal in water for 10 minutes. Add remaining ingredients and mix. Bake at 350* for 20 minutes.
I like the second version best, but they are both good. I find the No Pudge mix at Safeway, and I hear you can get it from Trader Joe's. My family likes these, I just don't tell them they are super high in fiber and good for them. I wouldn't want to give away my secret!
